We really liked this one, and it's much healthier than normal chicken nuggets. Here is the link to the recipe. It is from Better Homes and Gardens Lowfat and Luscious.
*I ended up using 4 cups of cornflakes instead of 2. I also just used chicken breasts that I cut up into pieces.

This is my current favorite recipe. I love it! The more cashews the better!

I found this recipe on Cooks.com. I added the sweet potato because my sister-n-law puts it in her chicken noodle soup and it's delicious! This is what we're having for dinner tonight. I'll let you know how it turns out!

Pineapple-Lemon Chicken
4 chicken breast halves
1 20-oz can crushed pineapple
1 small lemon, very thinly sliced and peeled
1/3 cup catsup
1/3 cup honey
1 Tbs. Worcestershire sauce
1 tsp. minced garlic (2 cloves)
1 tsp. salt
1/4 tsp. dried rosemary, crushed
1 tsp. cornstarch
Hot cooked rice
*Drain pineapple, saving 1/4 cup juice. For marinade, combine pineapple, pineapple juice, lemon slices, catsup, honey, Worcestershire sauce, garlic, salt, and rosemary. Place chicken in a self-sealing bag. Pour marinade over chicken. Marinate in the fridge for 2-24 hours.
*Drain chicken, saving marinade. Grill chicken, brushing with additional marinade.
*In a saucepan combine remaining marinade and cornstarch. Cook and stir over medium heat until thickened and bubbly. Cook for 2 minutes more. To serve, spoon over chicken and rice.
This was a good recipe, even for people who aren't pineapple lovers (like Clint)! We used just regular boneless chicken breasts. If you don't own cornstarch, don't worry about buying it. I didn't notice that it made much of a difference! Enjoy!
